A peek at the behind the scenes at Mobile Noods
Hey Noodle Nation,
Let's Talk about something that has been on my mind, and maybe yours too. I have heard some concerns about my hands and whether they're as clean as they should be. so lets clear the air.
Up first, I wash my hands frequently, and glove up during any protentional cross contamination prep. Such as separate meats, dairy, nuts, eggs, and so on. During those busy rush hours I have given myself enough utensils to not need for wearing gloves. No bare hand Contact is made. Gloves can sometimes provide a false sense of cleanliness. many food handlers don't change them as often as they should, creating even more contamination. Clean, bare hands are often more safe, especially when done properly and frequently.
Now, I know my hands may look grubby and unappetizing; they're stained, not dirty. the propane gas used in my setup creates a fine black soot or ash that settles on the griddle and the bottoms of my pans and other equipment. Overtime, it has worked its way into each scar and fingerprint ridge. No amount of scrubbing can remove it all ( just working hands).
But rest assured, my hands are clean. And as for the food in my hands, seen in photos, that's always apart of my testers; never served to consumers. Sometimes I put too much or too little liquid into my nood mixture, causing them to either not extrude or just fall apart as they do. I have implemented a test run of each batch to ensure the quality that I serve to the public.
While we talk behind the scenes, I have worked hard over the last few months on upgrades to the Mobile Noods Trailer. Running a mobile kitchen isn't just about the cooking, but also about optimizing space, keeping things running smoothly, and maintaining consistency.
Here's what's new:
Better Insulation: Keeping things warmer during winter months will allow for me to remain open year round. Certain ingredients can't freeze, and neither can my pipes.
Removed Dead Space: Every inch of space matters in a mobile kitchen. I've organized and reorganized multiple times, working towards the most efficient layout. (this here and that there)
Upgraded Sink Setup: I now have a constant water pump and raised sink sprayer, making all washing that much faster and stress free.
Second Fridge: More Storage means menu expansion and better organization. Yes Please!!
All of this will help me remain consistent in serving hot quality pasta, faster, while keeping everything more clean than previously mentioned. I appreciate your trust and support as Mobile Noods grows in this beautiful community. You all keep me pushing to improve myself every day!
